TRADITIONAL MACHACADO WITH EGGS

Machacado with eggs is a traditional dish from the northern state of Nuevo León, usually enjoyed as breakfast. It is the perfect protein-packed and nutritious way to kick-start any day. Not only is it delicious, it is simple to make and perfect for those tight on time. Machacado con huevo is everything you need in a breakfast dish!

Ingredients

Original recipe yields 4 servings

Ingredient Checklist
  • 4 oz Alamo Sun Dried Beed Machacado
  • 8 large eggs
  • ¼  white onion, finely chopped
  • ½ bell pepper (or 1 jalapeño for spicy flavor), finely chopped 
  • 1 tomato finely chopped
  • Vegetable Oil
  • Salt and pepper
  • Tortilla (flour or corn)

Directions

Step 1 Turn on stove to medium heat and place 2 tablespoons of vegetable oil on medium/large pan. 

Step 2 Add chopped onion, tomato, bell pepper/jalapeño and add to the pan. Stir as needed for about 5 minutes until softened.

Step 3 Add Alamo Sun Dried Beef Machacado to pan and mix with previously added ingredients.

Step 4 Crack eggs into pan and mix. Stir until fully cooked.

Step 5 Enjoy the delicious machacado with warm corn/flour tortillas of your choice.
